The Blank Slate
After lots of back and forth with realtors and lawyers (lots), we got the keys to the store. This is a new construction space that has never been occupied. Which is why nobody noticed the leaky ceiling and lack of running water. In other words, we are completely starting from scratch. As I mentioned in the About Us blog post, this store is exactly twice as big as Tracy’s current store. We don’t necessarily need more retail space. But we need all of the cooking and production space we can get. We’re upgrading to large capacity baking equipment and adding new services like our in house printed packaging and we want more than 2 people to be able to work back there without them wanting to kill each other!
There’s bajillion things that need to be done and we’re both newbies. Which should make for a semi-entertaining blog for you to read! To focus and prioritize, we examined logical order of progression that needs to take place. Before we can sell treats, we need a way to bake them and a way for people to buy them. Before we can bake and package treats, we need equipment. Before we can get equipment, we need to have the flooring done. Before we do the flooring, we need to paint. AHA! PAINT!
So that’s the first order of business. Since the space has 22′ foot high walls, I get the manly task of taking my manly pick up truck and trailer to rent a manly scissor lift from the local equipment company. As tempting as it is to go with some wild colors, we want to stick to our theme of letting our product and decor provide the splashes of color. Therefore, we’ll probably be doing some sort of light neutral wall color since we’ll be going with a black-ish floor (more about the flooring in another blog post).
